Pacific, a Modern Australian seafood restaurant and the first solo venture by renowned chef Shaun Presland, was conceived to combine market-fresh sushi, grilled fish, and a curated selection of Pacific-region wines in an environment that balances warmth with refinement. The concept aims to bring Japanese-influenced cuisine through an Australian lens to London, offering a unique experience where diners feel closely connected to the chef’s process, grounded in the restaurant’s values of simplicity, quality, and authenticity.
Concept
The Brief
The ground floor, designed as an extension of Presland’s kitchen, removes traditional barriers to create an open, interactive dining experience. With a chic yet understated Sydney coastal aesthetic, the space subtly references Japanese design through soft aquatic symbolism and earthy materials.
The lower ground floor offers a more intimate atmosphere, featuring a bar and private room designed for flexible use—perfect for events, cooking lessons, and tastings. In the evening, the atmosphere transforms to evoke a more exclusive, premium feel, with eclectic touches and the option for private gatherings.
